When it comes to chicken inasal, nobody can boast being the Manokan Country more than Bacolod City. To celebrate Bacoleños love for inasal, the first Bacolod Chicken Inasal Festival is slated on May 15-20 at the Manokan Country and the SM City North Wing vacant lot.
Chicken inasal is a form of barbecued chicken specific to Bacolod. Manokan Country located near SM City is an area in the city filled with inasal stalls with rustic ambiance that has become a tourist attraction.
The people responsible for creating the Manokan Country and those who helped catapult inasal into national prominence shall be given recognition during the opening ceremonies on May 15. They include former Bacolod Mayor Jose Montalvo and Mayor Evelio R. Leonardia, who was then the tourism officer of Negros Occidental. Other awardees are actor Joel Torre and film director Peque Gallaga for their contribution in introducing inasal to Manila; Jun Tanalgo, who owns 23 branches of Bacolod Chicken Inasal in Makati and Manila; Edgar Sia, the owner of Mang Inasal, among others.
The city will attempt to have the Inasal Festival break into the Guinness Book of World Records by staging the longest grilled chicken barbecue in the world. It was reported that City Councilor Alex Paglumotan said this year’s Inasal Festival targets up to six kilometers of chicken barbecue line to establish the record that would involve 18,000 chickens, each quartered and skewered for a total of 72,000 sticks of chicken barbecue. He estimated that the whole event would also require up to 20,000 sacks of charcoal for the grill and 18,000 to 20,000 volunteers to grill the chicken.
That’s a lot of chicken inasal to consume. But with the threat of a swine flu pandemic, who needs pork?
The Bacolod Chicken Inasal Festival is going to be an annual event since the City wil register it with the Department of Tourism as one of the festivals in the country.

Bacolod Chicken Inasal is cooking their’s on LPG fired grillers… (I think)… so that they can have access inside the malls here… which would balk at the idea of using charcoal in cooking vast amounts of chicken… (too smoky) … so the “inasal” they serve is pale… tasteless…. and sometimes raw..
Mang Inasal….. never mind.. (I’ll eat at KFC nalang!)

With the exception of JT Manokan, I don’t think any of the other restaurants in Manila with the “inasal” brand serve authentic tasting inasal nga manok. As a Bacolodnon, I find Mang Inasal too sweet. It tastes much more like the “inato” from Cebu and Dumaguete. The yellow Bacolod Chicken Inasal naman is too bland. Namit gid ya ang bisaya nga manok sa manokan country. Sa N.Velez gid.
To compare Mang Inasal and Bacolod Chicken Inasal to the ones in Manokan Country and even Chicken House is laughable.

The city should have given one of the awards to the descendants of the Velezes, the ones who brought inasal to Bacolod. They are the heart of Inasal. It is a humble family legacy which dates back to the time of our grandmothers. Manokan country is just one of its products. Even today they are the bulk and heart of it as the owners, to the cooks, waiters, etc are mostly related one way or the other to the Velez family.
The city should thank the Velezes for bringing it over from Iloilo and making it uniquely Bacolod when they decided to transfer here. If not for them, there wouldn’t be Inasal associated with Bacolod City.
I should know… Sabel Velez, who was the one who brought it to to Bacolod and made the most flavorful recipe and got the most influential patrons in the city was my grandmother.

There’s only one true Bacolod Inasal… and that’s in Bacolod City… A lot of restaurants here in Manila serve Bacolod Chicken Inasal… they call it Inasal-this and Inasal-that… but at the end of the day, when eaten by a true blue Negrense… it just falls short of the expectations..
But I digress…. Joel Torre’s (yes the actor) JT Manukan here (in Manila) for me serves authentic Chicken Inasal… and melts in your mouth Sati-Babi among others…. along of course with Bacolod Chicken House…. My wife and I prefer JT’s here in Makati because of its “Bacolod crowd” during weekends… 😀
Remember… Bacolod Chicken Inasal is best eaten with garlic rice, a dash of chicken oil, a pinch of salt, your favorite “saw-sawan”.. (sinamak for me thank you very much)… and using your fingers (kinamot)
